Mocktail O'clock

With the weather warming up, now is the perfect time for a Spring cocktail. If you don't drink alcohol or are planning to make an amazing fresh drink for the family, you can still enjoy the sweet pleasures of a cocktail by making a mocktail. You can make a range of delicious drinks using combinations of sparkling water, soda, fresh juices and fresh fruit or herbs.

One of my favourite mocktails is a Ginger and Blueberry Mojito in which my wonderful friend gave me the recipe for (thanks Gem)

Recipe
Blueberries (fresh or frozen)
Chopped Mint
Grated Ginger (skin off)
Soda water
Ice
Sugar
Water

Combine a small amount of water and sugar together in a small pot and boil until the sugar is dissolved.
Place the sugar water in the fridge to cool.
In a jug, place the soda water, ginger, blueberries and mint. Swirl to combine.
Add the cooled sugar syrup and mix
Serve in a glass filled with crushed ice.
