Homemade Christmas Pav!



Merry Christmas and Happy New Year everyone!
Check out my fabulous Christmas Tree with all of it's presents (DIY wrapping made by me of course.... I mean Santa!).



Almost every year I am on dessert duty. My all time favourite Christmas dessert to make and eat is Pavlova. The following recipe is based on a good old Coles recipe. Hope you enjoy!

Ingredients
1 Pre-made Pavlova
Frozen blueberries
Fresh Strawberries - wash and slice in half
1/4 Cup fresh lemon juice
2 tsp grated lemon zest
1/4 Cup Coles unsalted butter, diced
250ml of double cream
Fresh mint sprigs and icing sugar, to garnish

The steps are so simple!

  1. Remove the pre-made pav from the packaging and place on a beautiful cake plate or stand
  2. Whisk eggs, sugar, lemon juice and lemon zest in a medium stainless-steel or glass bowl to blend. Place bowl over the hot water and whisk in butter. 
  3. Continue to whisk for a further 3 mins, or until the lemon butter has become thick and creamy and coats the back of a spoon.
  4. Remove from heat and whisk until most of the heat from the lemon butter dissipates. Set lemon butter aside to cool completely, stirring occasionally. The lemon butter will continue to thicken as it cools.
  5. In a large mixing bowl, whip cream until thickened but not stiff. Spread whipped cream in an even layer on top of the pavlova. Follow with lemon butter and finish with berries. Garnish with fresh mint and icing sugar.
  6. Devour straight away
